Ingredients
1red bell pepper, diced
1 orange bell pepper, diced
1 yellow onion, diced
400g yellow potatoes (2-3), diced
30g (2 Tbsp) olive oil
448g (16oz) 93% ground beef or turkey
2 tsp coarse salt
1 tsp garlic powder
1 tsp chili powder
1/2 tsp rubbed sage
1/2 tsp Italian seasoning
1/2 tsp cumin
(Or favourite all purpose seasoning)
650g (2.75 cups) egg whites
3 eggs
200g (1 cup) cottage cheese
8g (1 Tbsp) corn starch
50g (1/2 cup) shredded cheese
10-12 12” tortillas
400g (2 cups) fat free Greek yogurt
50g (3 Tbsp) hot sauce
Garlic, salt and pepper to taste
Cilantro (garnish)
Instructions
Preheat oven to 450
Add peppers, onion, potatoes to a sheet pan. Coat with oil, salt and pepper. Roast until softened, about 30-40 minutes
Chunk up meat and put ontop of vegetables.. Mix together seasonings and sprinkle over meat bake until browned, about 5 min.
Mix together eggs, cottage cheese and cornstarch. Pour over the meat and vegetables. Sprinkle shredded cheese overtop. Bake until middle is firm and edges are crisp, about 25-30 min.
Take out of the oven and let sit about 10 minutes before slicing.
Cut into 10-12 pieces with a pizza cutter (down the middle then 4-5 slices across)
Lay tortilla out and put sauce (yogurt, hot sauce and seasonings) on tortilla.
Put a rectangle onto the tortilla and roll like a burrito.
Freeze
To reheat
Microwave 3-4 minutes Chunk up flipping halfway through
OR
Place on pan over medium-high heat for 1-2 min per side to crisp tortilla.
