Spicy Chicken & Sausage Lasagna
Serves 8

300 g pkg frozen spinach
½ cup white wine
14g pkg dried mushrooms, chopped
2 skinless boneless chicken breasts
Oil
5-6 hot ground sausages
½ cup sherry or marsala
700mL jar flavoured tomato pasta sauce
1 tsp basil
1 tsp oregano
6 tbsp butter
1 onion, chopped
227g sliced mushroom
1 ½ tsp salt
1/3 cup flour
2 ½ cup homo milk
½ tsp ground nutmeg
2 cup grated mozzarella
1 cup fresh parmesan
9-15 oven ready lasagna noodles
 
Let spinach thaw on the counter
Microwave wine on high until hot ~1 min. Add to the dried mushrooms and cover with plastic wrap, leave at room temp.

Meat sauce: slice chicken into bite sized pieces. Coat a large fry pan with oil and set over medium heat. Crumble sausage meat into the pan. Keep the meat crumbly as you cook it until no pink remains ~3 min. Add sherry and chicken. Increase heat to high. Stir frequently until most of sherry is gone, ~5 min. Add pasta sauce, basil and oregano. Stir until all hot, remove from heat.

Mushroom sauce: Melt 1 tbsp butter in a large frying pan over medium heat. Add onion. Saute until softened, 3 min. Add 1 tbsp butter and sliced mushrooms. Pan will be full. Sprinkle with 1 tsp salt. Stir often until mushrooms start to soften ~4 min. Add dried mushrooms and wine. Increase to high and stir until most of the liquid is absorbed ~5 min, remove from heat.

White sauce: Melt remaining 4 tbsp of butter in a large saucepan over medium heat. Gradually whisk in flour. Whisk until mixture bubbles. Gradually whisk in milk. Whisk until mixture comes to a boil. Reduce heat to medium-low. Whisk until thickened 3-5 min. Stir in nutmeg and ½ tsp salt. Stir half of sauce into mushroom mixture. Set remaining sauce aside.

Preheat oven to 350˚F. In a bowl, mix cheeses. Spread enough meat sauce to cover bottom of a 9x13” baking dish. Top with 3-5 noodles, don’t overlap. Spread half mushroom sauce. Half of meat sauce. 1 cup cheese. 3-5 noodles. Rest of mushroom. Scatter wet spinach. 1 cup cheese. 3-5 noodles. Meat sauce. White sauce, it spreads during baking. Rest of cheese. Cover pan with foil. Place on a rimmed baking sheet. Bake 1 hr. Remove foil. Continue baking until sauce is bubbly and light golden, 15-20 min. Let stand 5 min before serving
