 Pasta Dough

1 tsp (5mL) olive oil
2 Large eggs (must be large)
1 ¾ cups (435mL) unsifted flour
½ tsp (2mL) salt
3 tbsp + ½ tsp (45mL) cold water
pasta maker

Place in the food processor flour, salt, olive oil and eggs. Process for 10 seconds. Gradually add cold water through the top slot. Form into a ball. Divide the dough into 3 portions working with 1 portion at a time. Place the pasta maker at the # 1 setting run the dough through the machine a couple of times. Move rollers closer then run though again until you reach # 5. Feed dough through cutting blades and divide the pasta. Boil large pot of salted water. Add 1 tsp (5mL) oil to water. When boiling add fresh pasta and cook 5-10 minutes.

Pasta Dough II

1 ¾ cups + 2 tsp (435mL) unsifted flour
½ tsp (2mL) salt
1 tsp (5mL) olive oil
2 large eggs
9 tsp (45mL) cold water

With metal blade in place, add flour, salt, olive oil and eggs to the food processor. Process for 10 seconds. Add cold water and process.
