Oatmeal Chocolate Chip Cookies
Yield 2 dozen
½ cup(125mL) Margarine
⅓ cup(75mL) White Sugar
6 tbsp(100mL) Brown Sugar
1 Egg
½ tsp(2mL) Vanilla
¾ cup(200mL) Flour
½ tsp(2mL) Baking Soda
½ tsp(2mL) Salt
½ cup(125mL) Rolled Oats
⅔ cup(150mL) Chocolate Chips
Preheat oven to 350°F(180°C). Cream together margarine(and peanut butter), white sugar, brown sugar, and egg(and vanilla). Fluff flour and measure. Combine with baking powder or baking soda(and salt). Mix dry mixture with creamed mixture slowly. Blend in chocolate chips(and rolled oats). Drop by teaspoon onto greased cookie sheet. Bake for 10-12 minutes until very light golden.

Classic Oatmeal Cookies

2 cups (500mL) brown sugar
2 eggs
2 tsp (10mL) vanilla
3 cups (750mL) rolled oats
2 cups (500mL) flour
1 tsp (5mL) baking powder
1 tsp (5mL) baking soda
½ tsp (2mL) salt

Skinny Oatmeal Walnut Raisin Cookies
Makes 30
1 cup flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
½ tsp cinnamon
2 tbsp butter, room temp
½ cup sugar
1 large egg
½ cup pure maple syrup
¼ cup unsweetened apple sauce
½ tsp vanilla
2 cups rolled oats
½ cup raisins
1/3 cup chopped walnuts
Preheat to 350˚F. Line 2 baking sheets with parchment paper, or a silicone mat.
In a medium bowl, whisk together flour, baking powder, baking soda, salt and cinnamon.
In a large bowl cream together butter and sugar on medium speed. Add the egg then the maple syrup, apple sauce and vanilla.
Stir in the dry ingredients by hand until just combined. Stir in the oats, raisins and chopped walnuts.
Drop heaping tablespoons of dough onto the baking sheets. Bake 12-15 minutes, until the cookies are light brown at the edges.
Let cool, on baking sheet 3-4 minutes then transfer to a cooling rack.
