Lemon/Lime Squares
Base:
250mL (1cup) unsifted flour
250mL (1cup) unsifted flour
65mL (¼ cup) unsifted icing sugar
1mL (¼ tsp) salt
1mL (¼ tsp) salt
125mL (½ cup) [½ square] margarine
Blend ingredients together into a pliable dough [may need to use hands]. Pat by hand into foil lined 20cm (8”) square pan. Bake at 350°F for 11 minutes
Topping:
2 large eggs

190mL (¾ cup) sugar
40mL (3tbsp) lemon/lime juice
40mL (3tbsp) lemon/lime juice
40mL (3tbsp) all purpose flour
1mL (¼ tsp) baking powder
1mL (¼ tsp) baking powder
Beat all ingredients together until smooth. Pour over hot base and return to oven. Bake at 350°F for about 25 minutes until pale gold. Cool then cut into squares
