Chicken Souvlaki
Serves 4

500g Boneless chicken Breasts
2 tbsp (30mL) Lemon Juice
2 tbsp (30mL) Olive Oil
2 tbsp (30mL) Olive Oil
3-4 Cloves Garlic, minced
2 tsp (10mL) Dried Oregano
2 tsp (10mL) Dried Oregano

tsp(1mL) Each Salt and Pepper
Cut chicken
into 2.5cm/1” cubes.
In a small bowl whisk together lemon juice, oil, garlic,
oregano, salt, and pepper.
Add chicken and stir to coat.
Cover and marinate
overnight.
Reserving marinade, evenly thread chicken onto skewers. Place on
foil lined jellyroll pan or broiler pan (broiler better). Broil 15 cm from heat
turning and basting ½ way through with marinade for about 12 minutes.
Or
barbeque them.
