Chicken & Sausage
Serves 6
Prep 15 minDressing
3 tbsp red wine vinegar
1 tsp Dijon mustard
1 tsp dried oregano
½ tsp lemon-pepper
¼ tsp salt
½ cup olive oil

In a small bowl whisk together vinegar, mustard, oregano, lemon-pepper and salt. Gradually whisk in oil until dressing is thick and well blended
1 tbsp vegetable oil
6 large boneless skinless chicken thighs (~2lb)
4 sweet mild Italian sausages (~1lb) cut into 3’s
1 ½ lb small red skinned potatoes (~1” diameter, if larger cut in half)
1 small red onion cut in wedges
4 large cloves garlic, smashed
½ cup small pimento-stuffed green olive
2 tbsp fresh oregano leaves
Coat bottom of large roasting pan with vegetable oil
In a large bowl toss chicken and sausage with 6 tbsp dressing. Place in roasting pan
Roast 15 minutes
In bowl toss potatoes, onion, garlic with 3 tbsp dressing. Arrange in pan with chicken and sausage
Roast another 40 min, or until potatoes are tender and chicken cooked through (165˚F)
Stir half-way through
Stir in olives and fresh oregano. Drizzle with reaming dressing
