
Place towel or rack in bottom of pot
Place jars in pot, cover with 1" water, bring to a boil to sterilize
Boil lids and bands to sterilize as well
Prepare your food
Remove jars from water, fill with food (remember to leave headspace), use a knife to let air pockets out
Wipe rim and thread with a damp cloth
Place lid on, screw on band finger tight
Place in water, boil empty jars to keep pot even
Bring to a boil for designated time
(Calgary altitude 1045m, add 10 min)
Turn off heat, let cool 5 min
Remove jars and place on a towel
DO NOT TOUCH 12-24 hrs
Listen for the pops, 12 hrs later remove bands and check seals
If failed then refrigerate and use within 4 weeks
Wipe jars and lids
Store in cool, dry space for up to 18 months
