Santa Fe Frittata
1/2 lb (250g) breakfast sausage cut into 1/2" pieces
1/2 cup red pepper
1/2 cup green pepper
6 eggs
1/2 cup mayonnaise
1 tsp dried sage leaves crumbled
1/2 cup shredded cheddar cheese
garnish: pepper rings

Brown sausage and drain. Add onions and peppers and cook until tender.
Spread mixture into a greased 9" quiche or pie plate.
Blend eggs, mayonnaise and seasonings. Whisk until smooth.
Pour egg mixture over sausages in pan.
Bake at 350°F for 20-25 min or until eggs are set. Sprinkle with cheese, return to oven for 1-2 min to melt cheese.
Garnish with peppers.
To serve cut into wedges with salsa on the side.
