Gourmet Macaroni and Cheese
Makes 6 servings
 


2 ½ cups macaroni
4 tbsp butter
4 tbsp flour
2 cups milk
1 tsp salt
1 tsp sugar
½ lb processed cheese (Velveeta)
2/3 cup sour cream
1 1/3 cup cottage cheese
2 cups old cheddar cheese, grated
1 ½ cups soft breadcrumbs
2 tbsp butter
Paprika
 
Cook and drain macaroni
Place in a 1 ½ greased casserole dish
Melt butter over medium heat, stir in flour mix well
Add milk and stir constantly over medium heat until it thickens
Add salt, sugar and cheese, mix well
Mix in sour cream and cottage cheese
Pour over macaroni and mix well
Sprinkle top with cheese and breadcrumbs
Dot with butter and sprinkle with paprika
Either freeze or bake
Bake 350˚F for 34-50 min

Notes: Good with bacon or tomato slices on top
